I find you get a lot of information with tours (much of which you don't really care about) but tend to miss the 'just standing back in awe' factor. I also visited them about 12 years ago and the crowds were overwhelming. The only way to get away from the crowds was to go to the dunes behind the pyramids (probably the viewpoint, you mention). Also great to read that uber works well in Cairo. It seems to be becoming the transport of choice for travelers. We went in December both times so it wasn't a time of year variation.
